Durban Curry in a Hurry
Make this traditional favourite in a fraction of the normal time, using either beef, mutton or chicken. Simply use the corresponding Garlic Man Curry Paste for the meat of your choice.
You will need:
- 4 Tbsp cooking oil
- 2 onions, chopped
- 1 kg beef cubes (or use mutton or chicken pieces)
- 2 Tbsp Garlic Man Durban Beef Curry Paste (replace with Durban Mutton or Durban Chicken Curry Paste according to the meat you are using)
- 1 Tbsp Garlic Man Crushed Garlic & Ginger
- 3-5 medium potatoes, chopped into cubes
Heat oil in a saucepan. Stir fry the chopped onions, add the beef cubes and braise until sealed.
Reduce heat and add the curry paste and ginger & garlic on low heat. Add cubed potatoes.
When spices start to thicken, slowly add water until desired texture has been reached. Increase heat and bring to the boil for 20 min. Reduce heat and simmer until beef is cooked.
Serve with rice and sambals – or make your own bunny chow in a hollowed out quarter loaf of bread.
